20 Minute One Pot Pasta

I have been trying to think up some easy lunches lately since packing food for work or school can be an everyday challenge for most people. Packing your own lunch saves money, and gives you the good stuff instead of any fast processed food. This recipe is super easy to keep in a container and eat throughout the week. I used it in 3 lunches this week which was perfect! It could also be put in the freezer until a later date.

One pot pastas have been popular social media recipes and this is my take on the simple, almost mess free dish.

I used what I had at home so add whatever you’d like depending on what you have as well. (I included some suggestions as well)


Ingredients:

  • 2 C gluten free or regular pasta (I used gluten free)
  • 1-2 diced tomatoes (I used medium sized ones)
  • 1 tbsp tomato paste
  • 3 hand fulls of your favourite dark leafy green (I used kale, it keeps a firmer texture and doesn’t wilt down too much in the cooking)
  • 2 cloves of garlic, minced
  • 2 tbsp red wine or cooking wine (Great way to use up that last bit of wine left over from the weekend!)
  • Sprinkle of onion salt
  • 1 C chickpeas or any bean of your choice 
  • 1½ C Water
  • 2-3 Tbsp Olive oil 

Spices & other optional ingredients: (I used all of these because I had them but use what you’d like and play around with adding different ingredients too! I definitely recommend using the spices as they add lots of flavour!)

  • Couple slices of sundried tomatoes 
  • Nutritional yeast (adds a ‘cheese’ flavour)
  • 1/2 C diced white onion 
  • Fresh or dried basil 
  • Pepper

How to:

  1. Add all ingredients to pot or pan (If you added a softer leafy green such as spinach – add this in half way through so its not too wilted after)
  2. Cook on high until it begins to boil – then turn down to medium and continue to stir often
  3. Cook until all-almost all of the water is evaporated (Around 10 minutes) and noodles are soft (Some gluten free noodles take longer to cook)
  4. If everything is cooked and there is still a little water left you can use a spoon to spoon out any excess or leave as is!

Super simple and perfect if you don’t have a large set of cookware or much room.
