Refresh Mint Watermelon Salad

After a long day in the sun, this salad will be sure to make you feel fresh and hydrated. A juicy pair: cucumber and watermelon, provide a boost of water while the mint is a perfect refreshing flavour. Cucumber contains 96% water while watermelon falling as a close second, has 94% water*. This will reboot your body and help keep the sun from drying you out. I decided to stick to the sweet theme and give this salad an orange-lime dressing.

Vegan, gluten free, refined sugar free

The Salad

I diced half a watermelon and half a cucumber, and then chopped my fresh mint and parsley.

I added all of these to a container and continued onto the dressing.

The Dressing:

I squeezed fresh limes and oranges, then added a touch of olive oil and a lemon grass mint balsamic vinegar. If you don’t have this available, crushed mint and/or crushed lemongrass would be a substitute. Finished with black pepper.

I added the dressing to my container, put the lid on and shook everything together. This is convenient to store in your fridge and can be dished into bowls when you’ve decided to take a break from your sunny day.

I like leaving the salad to sit overnight as the watermelon and herbs really soak up the dressing, but if you just can’t wait, well I don’t blame you.
